Every bottle of whisky starts as porridge. Not a marketing line — an actual fact the industry doesn't lead with, because "cooked grain slurry" doesn't sell as well as "single malt." But if you want to understand what's actually in your glass, that's the honest starting point.
Whisky is made from grain, water and yeast. That's the whole ingredient list, by law, in every whisky-producing country worth naming. Everything else — the smoke, the sherry notes, the vanilla, the twelve years on the label — comes from what happens to those three things afterwards, mostly inside a barrel. This is the process, plainly, with nothing embellished.
What are the three ingredients in whisky?
Grain, water, yeast. No fruit, no sugar added, no flavouring — a genuine whisky can't legally contain any of that. The grain provides the starch that becomes alcohol, the water carries the process along and dilutes the spirit to drinking strength, and the yeast does the actual work of turning sugar into alcohol. Everything you taste that isn't "raw spirit" comes later, mostly from the wood.
What's a mash bill, and why does it matter?
The mash bill is simply the recipe of grains used — which ones, and in what proportion. Distillers mill the grain, cook it with hot water to release its starches as sugar, and that sugary liquid (the "mash" or "wort") is what gets fermented. Different grains push the finished spirit in different directions:

A mash bill of 100% malted barley makes a single malt. Mix in other grains and you're generally into grain whisky or bourbon territory, depending on the ratios and where it's made. None of this is romantic — it's mostly agronomy and yield.
What does yeast actually do?
Yeast eats the sugar in the fermenting mash and converts it into alcohol and carbon dioxide — basic biology, the same process that makes bread rise and beer ferment. This stage, fermentation, usually runs a few days and produces a low-alcohol liquid called "wash," essentially a rough, unhopped beer sitting around 7–9% ABV. The strain of yeast and the length of fermentation both influence flavour, which is why some distilleries guard their yeast like a trade secret and others buy it from the same commercial supplier as the local bakery.
Does water matter as much as distillers say it does?
Somewhat — water goes into the mash, and it's used again at the end to bring cask-strength spirit down to bottling strength. Mineral content can have a marginal effect on fermentation and mouthfeel, though the "our water comes from an ancient spring" copy on distillery websites tends to do more work in marketing than it does in the glass. What matters more is that the water is consistent, batch after batch — reliability, not romance.
Why does it go in a barrel at all?
The wash gets distilled — heated so the alcohol vaporises and is collected separately from the water and grain solids left behind. What comes off the still is clear, high-proof "new make spirit," and it barely resembles finished whisky. It's the barrel that does most of the flavour-building from here: colour, a large share of the aroma, and the vanilla, caramel and dried-fruit notes people associate with "whisky" all come from years of contact with oak, not from the grain itself. This is also where legal ageing minimums apply — three years in a wooden cask for it to be called Scotch, for instance — and it's the stage that turns a technically-finished spirit into something worth calling by name. So what turns "spirit" into "whisky"?
Grain, water and yeast get you a fermented, distilled spirit. Time in wood is what turns that spirit into whisky, legally and in practice. Skip the barrel and you've made vodka or a grain spirit, not whisky — which is also why age statements exist: they're not a badge of quality so much as a record of how long the wood had to work. Country of origin adds its own rules on top — Japanese whisky, for example, follows broadly similar grain-to-cask logic to Scotch but leans on regional touches like mizunara oak casks, which we cover in our beginner's guide to Japanese whisky.
Does the glass change what you taste?
A little, and it's worth saying plainly: nothing about the glass changes what's in the bottle. A tulip-shaped glass concentrates aroma more than a straight-sided tumbler, which is genuinely useful if you're trying to pick apart a mash bill's grain character or the oak influence underneath it — that's the whole logic behind a nosing glass like our Helix Whisky Glasses. Is whisky gluten-free if it's made from wheat, rye or barley?
Distillation removes gluten proteins, and reputable lab testing generally finds finished whisky below detectable gluten levels — but if you have coeliac disease, that's a decision for you and your doctor, not a blog post. We're not going to tell you it's medically safe; we're telling you what's in the process.
What's the difference between a mash bill and a grain bill?
Functionally, none — they're the same thing, just different regional terms. "Mash bill" is more common in American whiskey writing, "grain bill" turns up more in Scotch and general brewing contexts.
Can whisky be made from something other than grain?
No — not legally, in any recognised whisky-producing country. A spirit made from potatoes, grapes or sugarcane might be excellent, but it's not whisky by definition; it's vodka, brandy or rum depending on the base and process.
Does a more complicated mash bill make a better whisky?
Not necessarily. Some of the most respected single malts use nothing but 100% malted barley. Complexity in the mash bill is a stylistic choice, not a quality marker — plenty of very ordinary whisky uses four grains, and plenty of excellent whisky uses one.
